Appearance: Fine and homogeneous powder
Colour: Light brown/ dark brown (depending on the degree of roasting)
Odor: characteristic odor of the
carob, sweet and slightly
chocolatée;
Taste: carob flavour, sweet/sugary;
texture: dry and fine;
Granulometry:12 / 15
Its pulp, sweet and aromatic, is used to produce carob powder, used as a natural substitute for cocoa.
Its extremely hard seeds give rise to carob gum (E410), a natural thickener highly valued in the global food industry.
